So a simple answer for Fasting is the willing abstinence or reduction from some or all food, drink, or both, for a period of time. It is mainly due to spiritual rituals prevailing through ages. Perhaps, healthy fasting is possible by eating the right foods in the right proportion.

These chutneys are super easy to make and taste amazing. In this post, recipes of three amazing fasting chutneys that are great in taste and goes very well with any type of fasting meal or snacks. How To Dry Roast And Easily Remove Peanut Skin?

  • Heat a pan on medium – low flame and dry roast peanut till brown spots on them. You have to stir continuously with the help of a spatula for 5 – 8 minutes, time will depend upon the number of peanuts.
  • Let it cool and then rub between hands to remove the skin from peanuts.
  • Warming the nuts deepens their flavors.
  • Try to separate through the Winnowing process.

Fasting Chutney/Dip 1: Coriander/ Cilantro dip ( Dhaniye ki chutney)  for fasting

INGREDIENTS:

  • 1.5 cups packed cilantro chopped leaves
  • 1/4 cup roasted peanuts
  • 2 tsp fresh lemon juice
  • Rock salt (Sendha Namak) to taste
  • 1-inch ginger chopped into pieces
  • 3-4 green chilies as per hotness needed
  • 1 tsp roasted cumin/ jeera powder
  • 3/4 cup water

Method for making Coriander/Cilantro Chutney for fasting:

  • Wash and pet dry cilantro leaves and chop roughly.
  • In a grinder jar first, grind roasted peanuts, ginger pieces and green chilies to a coarse paste.
  • Now Add roughly chopped cilantro leaves, Rock salt, roasted cumin powder, and lemon juice.
  • Grind it into smooth paste by adding water. It took me half a cup of water for a thick consistency of coriander chutney.

Tip1: Roast the peanut and cumin for deep flavors.

Tip 2: Add 10 – 15 Mint leaves for added flavors.

Tip 3: Add water according to the consistency of the dip needed. More water will make it thin/ runny and less water thick.

Fasting Chutney/Dip 2: Coconut and Coriander Chutney/dip ( Nariyal Dhaniya chutney)

INGREDIENTS:

  • 1 cup desiccated coconut/ grated fresh
  • 1/4 cup chopped cilantro/ coriander leaves
  • 2 tsp lemon juice
  • Rock salt ( Sendha Namak) to taste
  • 1-inch ginger chopped into pieces
  • 3-4 green chilies as per hotness needed
  • 3/4 cup of water

Method for making Coconut and Coriander Chutney/dip ( Nariyal Dhaniya chutney) for fasting:

  • In a grinder jar first, grind chopped ginger and green chilies to a coarse paste.
  • Then add to the jar all remaining ingredients – desiccated coconut, chopped cilantro leaves, salt, lemon juice and water.
  • Grind it into a smooth paste. It took a half cup plus 2 tbsp of water. Adjust the water according to the consistency you need for chutney/dip.

Tip 1: You can take freshly/ frozen grated coconut.

Tip 2: Add water according to the consistency of the dip needed. More water will make it thin/ runny and less water will make it thick.

Fasting Chutney/Dip 3: Sweet Dates Dip ( Khajoor ki Meethi chutney)

INGREDIENTS:

  • 1 cup deseeded dates/ khajoor
  • 1/4 cup jaggery powdered/ chopped into pieces
  • 1 tsp roasted cumin/jeera powder
  • 1 tsp dried ginger powder
  • 1/2 tsp red chili powder/ paprika
  • 1/4 tsp black pepper powder
  • Rock Salt ( Sendha Namak) to taste
  • 1 – 2 cups of water as needed

Method for making Dates/ Khajoor Meethi Chutney/Dip ( Khajoor ki Meethi chutney) for fasting:

  • Heat a pan on low to medium flame. Add khajoor/dates, jaggery powder/pieces and water to the pan. Let water comes to a boil.
  • Add all remaining ingredients -, cumin powder, ginger powder, red chili powder, black pepper powder, rock salt according to taste.
  • Mix all things with the help of a spatula. Try to mash dates with a spatula as they become soft in boiling water.
  • Try to evaporate water and mash dates as much as you can with a spatula.
  • Let it cool down. You can serve this as it is if you like to have thick and have some chunks in your chutney.
  • Grind the paste after cooling.
  • Store this thick paste in a glass airtight bottle in the freezer for 2-3 months.
  • Now add half cup water to remaining paste and pulse for 1-2 times.
  • A smooth flowing consistency meethi khajoor chutney is ready.

Tip 1: Store thick paste in a glass airtight jar in the freezer for using it for later use.

Tip 2: It stays good for 2-3 months as it does not have water content.
