Palak Paneer

Palak or Spinach is leafy vegetable very good for health. But kids needs some thing interesting and Tasty to it. So make simple spinach lovable by adding paneer to it. This can be served with Rice or Naan/ Flat bread.

INGREDIENTS:

  • Bunch of Spinach
  • 1 large Onion
  • 1 inch Ginger roughly chopped
  • 2 – 3 Garlic cloves
  • 1 large Tomato
  • 2 green Chilies
  • 11/2 spoon of Butter
  • 2 cloves
  • 1 Teaspoon cumin seeds
  • 1/4 Teaspoon Turmeric powder
  • 1 Teaspoon Red chili Powder/ Paprika
  • 1 Teaspoon Coriander and Cumin powder
  • 1/2 Teaspoon Garam Masala
  • 1 Teaspoon Kasuri Methi leaves(crushed)
  • Salt as per Taste
  • 8 ounces Paneer/ Extra firm Tofu

 

Wash Spinach properly and boil it with little water+ salt and then drain excess water to make a fine puree. This process is also known as blanch the spinach. It helps to keep the nice green color of Spinach. We can keep this water to add later.

Now in a blender take following ingredients to make a fine puree

one ONION,one TOMATO, two GREEN CHILIES, little GINGER, two-three GARLIC CLOVES,

MASALA Puree

In a pan add little butter ,clove and cumin seeds , when they began to splutter add Masala puree to it. Add little Turmeric, one teaspoon red chili powder and coriander and cumin powder.

Saute it nicely for 10 min. on medium flame. little oil should come on sides of the pan. There will be nice aroma of all spices. At this point add in palak puree and paneer cubes.

Mix properly and add  Salt as per taste, little Garam Masala and kasuri methi. Simmer on low flame for 5 min. We can add left over water from blanch process to make it little thin. Add little at a time according to your preference. Add in Spinach puree and fold in Paneer or Tofu. Simmer on low flame .

Serve it Hot with Rice or Roti.

TIP :

  • For making it VEGAN or more healthier, Substitute Paneer with EXTRA FIRM TOFU.
  • We can add Green Peas if Paneer and Tofu are not available.
